Roasted Honey-Glazed Carrots



My husband loves sweet foods, which makes honey-glazed anything delicious from his point of view. Therefore, these carrots make a great for a side dish. They're relatively quick, very simple, and best of all yummy (the ones in the photo were all that were left).

The original recipe provides three servings from four carrots. Even though I'm just cooking for me and my husband, I knew three servings wouldn't be enough given his affinity for sweet foods, therefore I used all ten carrots I had on hand and adjusted the ingredients accordingly.

Ingredients:
10 regular-sized carrots, peeled
3 tablespoons butter, melted
3 tablespoons honey
salt & pepper to taste**

Preheat your oven to 425 degrees. Cover a cookie sheet with tin foil, and spray with your favorite cooking spray (trust me, you *really* want to do this).

Cut your carrots into thirds, then cut each third in half to make each carrot lay relatively flat. Aim to have your carrots all relatively the same size. Lay them all out on your cookie sheet.

Mix your butter and honey together, then brush over all your carrots. Season with salt & pepper.

Roast until your carrots are done to your desired tenderness, which for the husband & I actually took around 25 minutes, rather than the 15-20 minutes called for in the original recipe.

** I have a feeling that these could be really good with crushed parsley and basil, which I intend to try soon.
